Black Honey Lactic Geisha

Produced by Edwin Noreña at Finca Campo Hermoso, this Gesha undergoes a sophisticated Black Honey process featuring a dual-stage mossto lactic fermentation. The 144-hour journey begins by fermenting ripe cherries for 72 hours to create a flavor-rich "mossto" juice. The coffee is then depulped and fermented for an additional 72 hours using that mossto and selected lactic yeast cultures to deepen complexity. After a slow, 10-day drying period in a parabolic dryer, the result is an intensely sweet, fruit-forward cup with a silky body and vibrant tropical clarity
