Founded in 2022 by Chen Wen in Lujiang, Baoshan, Yunnan, Shouzhuo Agriculture (守拙农业) has rapidly become one of China's most innovative specialty coffee producers. Guided by the philosophy of 守拙, embracing humility, restraint, and respect for nature, the farm focuses on expressing varietal character and Yunnan's unique terroir through meticulous cultivation and scientifically controlled post-harvest processing. Rather than relying on aggressive fermentation, Shouzhuo pursues clarity, sweetness, and balance in every lot. In 2025, Geisha coffees processed by Shouzhuo earned 6th and 9th place in the prestigious Gems of Yunnan competition, highlighting the producer's exceptional processing standards and reinforcing Yunnan's growing reputation for world-class specialty coffee.

Processing

Shouzhuo's signature Dark Room Drying (DRD) Natural process is designed to maximize sweetness and aromatic complexity while preserving exceptional cup clarity. Fully ripe cherries are carefully hand-selected before undergoing a controlled whole-cherry fermentation. They are then transferred into a temperature- and humidity-controlled dark room, where they dry slowly away from direct sunlight. This prolonged drying method allows sugars and aromatic compounds to develop gradually while minimizing harsh or over-fermented characteristics, resulting in a coffee with refined fruit expression, silky sweetness, and remarkable transparency that showcases both the Typica variety and Yunnan's distinctive terroir.

In the Cup

Elegant and fruit-forward, with notes of lemon, dried date, grape, and black plum. Bright citrus is complemented by rich dried-fruit sweetness and ripe dark stone fruit, finishing with a silky body and exceptional clarity.
