About the Producer

Campo Hermoso is the experimental coffee project of Edwin Noreña, a producer, Q-Grader, processing consultant, and former Cup of Excellence judge based in Quindío, Colombia. With more than 20 years of experience in specialty coffee, Edwin has become internationally recognized for developing highly expressive fermentation techniques that combine precision processing with clarity and structure in the cup. 


Processing

This lot undergoes Campo Hermoso’s signature Black Honey Lactic Mosto process. Fully ripe cherries are carefully sorted and fermented in a low-oxygen environment through extended carbonic maceration. During fermentation, concentrated coffee “mosto” is collected and inoculated with selected lactic cultures before being reintroduced during a secondary fermentation stage. After depulping, a heavy layer of mucilage is intentionally retained during slow drying, enhancing sweetness, texture, and aromatic intensity. The result is a deeply layered cup that balances intense florals and wine-like fruit with remarkable cleanliness.


In the Cup

Deeply perfumed and intensely expressive, with notes of rose, wine, glacé cherry, lavender, and thyme. Silky and floral with layered dark-fruit sweetness and a long, elegant finish.

Coffee to water ratio: 1:16
Extraction time: ~2'30"
Water temperature: 94°C
Grinding mill & grinding level: C40: #20–22
Pouring speed: ~5 ml/s

Brewing Steps

Bloom
Pour 50ml of water in a circular motion. Bloom for 40 seconds.

Second Pour
At 1'15", pour in a circular motion until the total reaches 120ml.

Third Pour
At 1'30", continue pouring in a circular motion until the total reaches 200ml.

Final Pour
At 2'00", pour until the total reaches 255ml, then let it drip until finish.
